Avocado and Hummus Toast
Prep time: 10 min / Cook time: 10 min / Total Time: 20 min
A classic piece of art that will become your taste buds’ new best friend.
Ingredients
- 4 eggs
- 8 tbsp hummus
- 1 avocado
- 12 cherry tomatoes
- 4 slices sourdough bread
- sweet chilli sauce
- spring onions (optional: for garnish)
Instructions:
1. Wash the cherry tomatoes. Roast them in the airfryer for 5 minutes (or put them in the oven for 15 minutes).
2. Meanwhile slice the sourdough bread. When the tomatoes have 3 minutes left, align the bread near them and toast until browned.
3. Peel the avocado and thinly slice it.
4. Heat some oil in a frying pan. Add the eggs to the pan and prepare them sunny-side up with a runny egg yolk (or cook them to your preference).
5. While the eggs cook, spread two tablespoons of hummus on each bread slice and add approx. 4 slices of avocado on each toast.
6. As soon as the eggs are finished cooking, lay them on top of the avocado. Season with salt and pepper.
7. Place 3 cherry tomatoes on each slice and drizzle some sweet chilli sauce on top.
8. You can cut some spring onions as garnish and voilà! Enjoy a healthy breakfast that will keep you full for a long time!
The beginning
Life is strange and the people we meet along the way can teach us something we’ll never forget.
Here’s a fun dichotomy: I was always a fan of real life experiences, rather than piling up diplomas and certifications, but education is a crucial element for crafting a fulfilled life, so I am now balancing this fine line between exploring life and fitting in for career opportunities.
How does all this connect to food I hear you ask? Well, I was in the middle of a Character Artist bootcamp, learning about how video game characters are built, which was a live class during the night (because of USA time zones) and most of my days were spent as a waiter, what even is sleep, amirite?
If you are a waiter or waitress, here’s a top tip: no matter what you do, you have to become best friends with the chef. Your lunches will have that extra bit of love, you’ll get to taste and learn a lot from them so, by all means, this is priority number one.


The restaurant/café I was working at was next to a river in a small town in England called Henley-on-Thames and we could seat around 60 people inside and then we also had a terrace roughly the same size. You wouldn’t think it could be full every day, but my goodness it was. People would travel for miles just to get to us because everything was freshly made, we kept it tidy at all times and business was booming. But that one thing on the menu, the one that brought people from all corners of the world, Scots, Welsh, Americans, French, Spanish, pretty much everyone that stopped there at least once and tasted or heard about this dish and told their friends about it.
To keep things simple, it’s hummus and avocado on toast with a few more things here and there as you can see in the photos, but the few extra bits made people travel far and wide. Luigi, the chef, was kind enough to share his secrets with me and it is an honour to help you put together a plate of miracles. Extremely filling, very appealing and delicious looking, but also quite flexible in terms of healthy food (meaning you can keep it clean or throw some bacon in).
Ok, classics first and then we’ll talk options. Before you do your own spin on it, you have to try the chef’s recipe first, then do as your heart desires, because this is a perfect balance of sweet and sour, soft and crunchy, bland and colourful.
As per the Chef’s instructions: poach the eggs for the ultimate experience, but fried eggs are also close to the best result. We’ve kind of settled for fried eggs due to saving a bit of time, but every now and then, we can’t resist the nostalgia and no matter what it takes, those eggs are getting poached and devoured in a matter of seconds. The rest of the recipe is as per the instructions above, but by all means, feel free to add your own spin with condiments and different sauces or ingredients and if you hit a jackpot, you know where to find us!
